John Nodler and Sam Kincaid are renovating a 1902 Queen Anne Victorian house in downtown New Glarus, aiming to transform it into the Cantine restaurant, which is set to open this October. After moving back to their Midwest roots, the couple decided to seize the opportunity when they learned of the restaurant’s availability. They envision Cantine as a community-focused dining space that blends familiar Midwest food with modern touches, featuring a seasonal a la carte menu. Chef-inspired dishes will include bar snacks with local cheese, seared tuna salads, and shareable pork chops.
The couple is committed to restoring the historic architecture while modernizing the interior, including keeping the original Douglas Fir flooring and enhancing lighting fixtures. The restaurant will accommodate 40-45 diners inside and feature a patio for events. Nodler and Kincaid’s passion for restaurant ownership stems from their culinary backgrounds and experiences in other locations, including their previous restaurant, Cadence, in Philadelphia. The name “Cantine” symbolizes movement and comfort, reflecting their mission to create a welcoming space for the community.
