Former Singapore Airlines flight attendant Mohammed Noorman Bin Mubarak Ahmad has turned his passion for food into a remarkable business success story. His culinary journey began in 2017 with a hawker stall at Yishun Park Hawker Center, inspired by family recipes and his wife’s Indonesian heritage.
After leaving his airline job, where he felt unfulfilled, he briefly worked in oil and gas but yearned to create something of his own. He invested in the hawker stall alongside friends and introduced Nasi Lemak Ayam Taliwang, a unique dish featuring fragrant rice and grilled chicken with sambal.
Despite initial struggles, including challenges from the COVID-19 pandemic, his stall gained recognition when it was listed in the Michelin Guide in 2021. Now, Noorman oversees 31 outlets across Singapore, achieving daily sales ranging from SGD 800 to SGD 4,000.
His dishes have garnered a loyal following, praised for their flavorful balance and quality. With around 100 employees, Noorman has shifted his focus from kitchen duties to business growth, all while emphasizing the importance of sustaining family culinary traditions for future generations.
